While it's all very well and good ordering off the menu and perhaps even dipping your toes into the specials of the day, some of the real gems may have to be ordered prior to your visit to the restaurant. Take Fino for example: with 48 hours notice, you could be sitting down to an order of roast Pyrenean milk-fed lamb or cochinillo (quarter pictured above), a roast suckling pig that's a specialty of Segovia. The piggy was tender and juicy and had thin crisp skin and we utterly destroyed it. The animal is brought over from Segovia and is a little younger than the suckling pigs usually found here in the UK - that quarter pig only fed two.

Of course, Fino's regular menu is full of beautiful tapas such as this arroz negro (black rice) pictured above, the black coming from squid ink. Save room for dessert - Londonist had the generously portioned donuts with vanilla ice cream (below) which we greatly enjoyed!
