I'd also add the Grafton and Tapping the Admiral to the fine pubs above.
Tapping the Admiral and the Pineapple are favorites of mine.
Add the re-vamped Torriano, now called the Rose and Crown... Decent beers on tap, much improved decor and atmosphere...
The Abbey Tavern needs to be on this list!
There is a wonderful pub off Seven Sisters Road, called the Swimmer at the Grafton Arms that needs to be included on one of your lists. Are you doing a Finsbury Park page? If so, it may fit in there. Great beers (usually London Pride, a Dragonfly and a guest on the handpumps), free juke box, real fire, plus excellent food - burgers are a speciality and on Sundays the roasts are well worth trying.
