Last night's Stella Artois beer and pint pouring masterclass at Swallow Street's swish Cuckoo Club drew an eager flock of would-be bartenders, including Chris Wade, winner of our Retweet competition. On hand to guide participants was Master Beer Sommelier, Marc Stroobandt. Awarded an honorary knighthood by the Chevalerie du Fourquet des Brasseurs of the Confederation of Belgian Brewers and titled Commander in the Order of De Roze Olifant, Marc graciously shared his knowledge and reckoned proper pouring is an easy nine-step process spanning purification, liquid alchemy, the skim and the final bestowal. Coming from a land where a head on a beer is expected, Marc might have raised a few Brit eyebrows but certainly proved a point with a tasting of drafts served correctly and not so.
