When it comes to sides, Japanese street food favourites like tetsunabe gyoza – dumpling parcels crammed with minced pork and vegetables – rule the roost. However, it’s hard to go wrong. Crispy fried chicken karaage, takoyaki octopus balls and salt-dusted edamame beans, zingy with yuzu, are equally worthy choices.
